Katherine Mattox, RDN

My name is Katherine Mattox and I am a Registered Dietitian Nutritionist (RDN). I graduated from the University of Delaware with a Bachelor of Science in Nutrition in 2005. I completed my dietetic internship at Cincinnati’s Good Samaritan Hospital in 2006.

I have worked as a functional medicine dietitian since graduating from my dietetic internship. Functional dietetics is the practice of providing patients with dietary recommendations to prevent or amend disease and achieve optimal health and wellness. I trained while working at LaValle Metabolic Institute, an integrative healthcare practice founded by Jim LaValle, R.Ph, a nationally recognized clinical pharmacist, author and developer of the Metabolic Code protocol taught to physicians around the world.

In 2015, I started my own practice Diet Improved: Katherine Mattox Nutrition. Through my practice I worked with individuals and created corporate nutrition programs to help patients/employees achieve their health goals and ideal weight through identifying food sensitivities and dietary triggers of inflammation. See the popular client health concerns I target here. I have worked with the chiropractors at Mount Lookout Chiropractic & Sports Injury Center. In summer 2019 I joined the practitioner team at Alliance Integrative Medicine as their in-house dietitian.

I enjoy working as part of a collaborative integrative medical team and learning something new about nutrition and health every day. I pride myself on having a sensible attitude about the importance of dietary choices for optimal health and providing patients with the education, personalization and support I would give a family member or close friend.

I belong to the Academy of Nutrition and Dietetics (AND) and their Dietitians in Integrative and Functional Medicine practice group. I love the public library and can’t consume enough nutrition information. I listen to webinars, podcasts, attend healthcare and dietetic conferences and read popular diet books and blogs. I enjoy being an active mother, spending time outdoors, traveling, red wine, dark chocolate, good friends and cooking delicious meals.
